About the Producers
Gilberto Ramos is a dedicated producer of coffee and plantains, whose family’s livelihood depends primarily on these crops. His farm boasts approximately 45,000 coffee trees, a testament to his family’s commitment to coffee cultivation. From a young age, Gilberto learned everything about coffee from his family, who have been farmers for generations. With deep knowledge spanning from germination to processing and drying, he leased land for ten years to tend to the crops the owner couldn’t manage. The exotic variety of his coffee ensures a good price in the market, which is crucial for his economy, as 80% of his income comes from this activity.
On the farm, the work is a true family effort. Gilberto’s children actively participate in the harvest, processing, and collection of coffee, helping in all stages of the process. Although the work is arduous and requires a lot of dedication, the family finds satisfaction in coffee farming, recognizing the value and reward it brings. Their collective effort strengthens their bonds and teaches them the importance of working diligently in the field.
Gilberto has high hopes for his children’s future. He dreams that they will become professionals in agriculture and continue the coffee tradition he cherishes. Although farming is a life of much effort, Gilberto believes it is worth it and hopes his children will follow in his footsteps, combining ancestral knowledge with new techniques to thrive in an increasingly changing world.
Processing
This coffee undergoes a unique, long fermentation. It begins with an anaerobic fermentation for 123 hours, and then an aerobic fermentation for an additional 19 hours. The coffee is dried on rasied beds for 36 days. Gilberto is meticulous about the details of his processing , and his kids also help at every stage of the process from farm to drying.

This coffee was imported through Primavera Green Coffee, a multi-origin specialty importer.
The FOB price for this lot was $4.28. During the harvest season from January through March, the New York C price for coffee was an average of $2.16; the $4.28 FOB price for this coffee includes a significant premium for the farmer above the C market price, which reflects the excellent quality of this coffee. After being imported to a warehouse in the consuming country, the United States, the coffee cost was $5.80/lb. The cost of the shipping from the warehouse to our roastery made our final green price $6.10.
